Black Quinoa Salad

Quinoa is a grain from South America which has a very interesting texture and taste. It comes in three varieties, black, red and white/beige.

An excellent source of protein and high in calcium, magnesium, iron and manganese,  quinoa mixes well with many different foods.  In this recipe I have added fruits and nuts and with the addition of coconut milk, made the leftovers into porridge for breakfast the next day.

Peach Tart

For the last couple of weeks the yellow-fleshed peaches have been sweet and delicious, melting in the mouth in a taste explosion. For my friend Jennifer's birthday celebration last weekend I made this peach tart, so simple, made in a matter of minutes and chilled for a couple of hours before we fell upon it. I thought it was huge but it was all eaten in less time than it took to prepare.
