In this season of sweet tooth indulgence, it’s nice to know that some treats aren’t all empty calories but as nutritious as they are yummy. Feel good about dessert this Christmas with this moist and delectable slice of nuts, seeds and fruits.

 

Ingredients

Base

2 cups pitted dates

½ cup water

2 cups walnuts, almonds and / or sunflower seeds

1 cup shredded coconut

Topping

2 teaspoons agar agar

½ cup water

4 6 ripe bananas

The reserved dates

½ teaspoon ground cinnamon

½ can coconut cream

Method

1.  Place dates in saucepan with water and heat gently, stirring occasionally, until they begin  to dissolve into a sticky mess

2.  Put the nuts into a food processor and process until they break into small pieces

3.  Add coconut and process till the mixture resembles coarse crumbs

4.  Add the dates to the food processor, reserving about half a cup

5.  Blend the dates into the nut mixture

6.  Press the mix into a torte pan or flat baking tray and set aside

7.  Dissolve agar agar in the water and leave it to stand for 10 minutes

8.  Place agar mixture in a small saucepan, bring to the boil and keep boiling for five minutes

9.  In a food processor mix the bananas, dates, coconut cream and cinnamon until creamy

10.  Add boiled agar agar mix and process for a moment

11.  Spread the mixture over the base and refrigerate

12. To serve, cut into squares and top with fruit or toasted flaked almonds

Preparation time: 30 minutes

Chill time: 30 minutes

Serves: 6.
