Easy Homemade Quinoa Granola

Ingredients
Makes: 7–8 cups
Preparation time: 15 minutes
Cooking time: 10–20 minutes
- 4 cups quinoa flakes
- 1 cup shredded coconut
- 1½ cups raw nuts of your choice, such as almonds, hazelnuts, pecans or Brazil nuts
- ½ cup pumpkin seeds
- ½–1 cup dried fruit of your choice, such as goji berries, sultanas, cranberries, chopped dates or dried apricots
- ½ cup coconut oil
- ½ cup maple syrup
- 1 tsp vanilla extract
- 2 tsp cinnamon
Method
- Preheat the oven to 150°C and line one or two baking trays with parchment paper.
- Combine the dry ingredients. Add the quinoa flakes, shredded coconut, raw nuts and pumpkin seeds to a large mixing bowl.
- Add the wet ingredients. Pour in the melted coconut oil, maple syrup and vanilla, then sprinkle over the cinnamon.
- Mix well. Gently stir until all of the ingredients are evenly coated.
- Spread onto baking trays. Spread the granola mixture evenly across the prepared trays, keeping it in a relatively even layer so it toasts consistently.
- Bake for 10–20 minutes, stirring halfway through. Keep a close eye on the granola as the coconut and nuts can burn quickly.
- Add the dried fruit. Remove the granola from the oven and stir through your chosen dried fruit while the granola is still warm.
- Cool completely. Allow the granola to cool before transferring it to an airtight container or glass jar. It will become crunchier as it cools.
Tips for the perfect Quinoa Granola
Watch the oven carefully. Granola can go from golden brown to burnt surprisingly quickly, particularly because it contains coconut and nuts.
Stir halfway through baking. This helps the quinoa flakes, coconut, nuts and seeds toast evenly.
Add dried fruit after baking. This prevents dried fruit such as goji berries, sultanas and cranberries from becoming too hard or burning in the oven.
Make it your own. Swap the nuts and dried fruit depending on what you have available. Try almonds with cranberries, pecans with chopped dates, or hazelnuts with goji berries.
Want chunkier granola? Press the mixture down lightly on the baking tray before baking and avoid stirring it too frequently. Allow it to cool completely before breaking it into clusters.
