Quinoa is a grain from South America which has a very interesting texture and taste. It comes in three varieties, black, red and white/beige.

An excellent source of protein and high in calcium, magnesium, iron and manganese,  quinoa mixes well with many different foods.  In this recipe I have added fruits and nuts and with the addition of coconut milk, made the leftovers into porridge for breakfast the next day.

 

Ingredients

1 cup black quinoa

2 cups water

½ teaspoon salt

1 tablespoon fresh ginger

½ cup dried apricots

½  cup flaked almonds

½ cup sesame seeds

1 teaspoon sesame oil

½ cup lemon juice

1 cup orange juice

Method

  1. Place quinoa in a small pan with the water and salt, bring to a boil, reduce heat and simmer until all the water is absorbed and the grains cooked, about 20 minutes, then allow to cool

  2. Finely chop the ginger

  3. Finely chop the apricots

  4. Dry roast the sesame seeds till golden

  5. Dry roast flaked almonds till golden

  6. Mix all ingredients together to serve
