Ingredients:

  • 1 Cup Diced Figs
  • 1/2 Cup Vegan Choc Chips
  • 1/2 Cup Coconut Sugar
  • 1 Cup Tahini
  • 1/2 tsp Vanilla
  • 1/2 Cup Plant Milk
  • 1 Cup Almond Meal
  • 1 Cup Buckwheat Flour
  • 1/2 tsp Baking Powder
  • Pinch of Salt

Method:

  • Preheat oven to 170 degrees Celsius
  • Combine tahini, coconut sugar, vanilla, salt and plant milk in a large mixing bowl
  • Add figs and chocolate chips
  • Mix through remaining ingredients until a dough is formed
  • Line baking trays with baking paper
  • Roll in to 10-12 balls and flatten with fingers or a forkful form desired cookie shape.
  • Bake for 15 minutes or until golden brown
  • Cool on drying rack. Or eat while still warm!

Makes 10-12 Medium sized cookies
